Hands wrapping tamales in corn husks at a wooden table

Story of the month · Oaxaca

The tamalada is not a recipe, it's a shift rota

December in Oaxaca means one table, six pairs of hands and a strict division of labour. Someone spreads masa thin enough to see the husk through. Someone fills. Someone ties. Someone stands at the pot and tells everyone else they're doing it wrong — this role is unpaid, hereditary and impossible to refuse.

We asked three families how their line runs. All three disagreed about masa thickness. All three agreed that nobody leaves before the first batch comes out.
